Chicken Chop


Bahan- bahan:
  • Chicken leg (without bone) approx. 500 g
  • Oil
Seasoning
  • 1/2 Bawang besar 
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • A pinch of salt
  • 1 tbsp sugar
  • Some blackpepper
  • 1 tsp Serbuk pati ayam
Sauce ingredients
  • 50g fresh shitake mushrooms, sliced 
  • 3 tbsp Oyster sauce
  • 1/2 Bawang besar (chopped)
  • 3 garlic (chopped)
  • 1 1/2 cup milk
  • Sugar to taste
  • Salt to taste
  • 1 tsp chicken stock granules
  • 1 cup water
  • 1 tbsp cornstarch
 Method
  1. Blend bawang with soy sauce for seasoning.
  2. Marinate chicken with seasoning ingredients for several hours
  3. Once the chicken breast has been marinated, dip it in egg before coating with flour. 
  4. Deep fry the chicken breast till golden brown.
  5. To prepare the sauce, saute the onion and garlic .
  6. Add the remaining seasoning ingredients used for marinating the chicken.
  7. Add mushroom.
  8. Add in the oyster sauce followed by water. Add in some black peppers.
  9. Add milk
  10. Add cornstarch
  11. Pour onto the chicken and serve with salad.

Chicken Patties for burger


Ingredients (for 6 large patties):
2 pieces chicken breast (minced/chopped)
5 tablespoon cornstarch
5 tablespoon breadcrumbs
2 teaspoon chilli powder
2 teaspoon dried parsley
3 teaspoon olive oil
some salt and pepper

Method:
  1. Combine all the ingredients except cornstarch and breadcrumbs, mix well.
  2. Add the cornstarch and breadcrumbs , and mix.
  3. Pre-heat oven to 200 degree celcius.
  4. Make round flat shape from the dough and place on an oven tray (greased).
  5. Bake for 15- 20 minutes.
  6. Serve with burger bread or can also be frozen for use later. =)

Chicken, Brocolli and Pasta Gratin



Ingredients:
Pasta ( macaroni, penne,...)
Broccoli 1 bunga
Ayam isi dada approx 300g (potong dadu )
Full cream milk approx. 1 cup
Garlic 5 ketul (smashed & chopped)
Cheese approx. 1 cup
Breadcrumbs approx. 1 cup
Chicken stock 1 cup
Cornstarch 2 sudu besar
Salt and pepper


Method:
  1. Bring a large saucepan of water to the boil over a high heat, add the pasta and a pinch of salt and cook according to the instructions on the packet. Drain well and set aside.
  2. Bring another pan of water to the boil, then add the broccoli and a pinch of salt and boil for 5 minutes, or until the broccoli is just beginning to soften. Drain well.
  3. Then, in a saucepan, add oil and saute garlic. Add milk and chicken stock, add the chicken.
  4. Bring to simmer over a medium heat, stirring occasionally.
  5. Add cornstarch which has been diluted in some water.
  6. Add some salt and pepper to taste.
  7. Remove from heat, then add the broccoli, pasta and half of the cheese, and mix.
  8. Add the mixture in a Pyrex dishes, sprinkle bread crumbs and remaining cheese over the top.
  9. Bake in over 300 degree Celsius for 20 - 30 minutes until the sauce is bubbling and the breadcrumbs are crisp and golden.

Simple Grilled Chicken Breast with Black Pepper Sauce

Ingredients (for 2 to 3 people)
  • 3 chicken breasts (boneless)
to marinate:
  • approx. 1/2 cup of olive oil
  • some salt
  • some garlic powder
  • some parsley leaves
  • some coarse black pepper
to make a basic rub:
  • some salt
  • some chili powder
  • some garlic powder
others:
  • 1/2 large onion
  • 1 carrot
for black pepper sauce:
  • 1 cup of chicken stock
  • 1 tablespoon black pepper powder
  • some coarsed black pepper
  • 1 table spoon corn starch

Steps:
  1. Combine all the ingredients for marinate and marinate the cleaned chicken overnight.
  2. Combine all the ingredients for the rub in a bowl and mix well. taste the rub, and adjust rasa ikut kegemaran masing2. (kalau nak pedas tambah banyak chili powder /kalau suka garlic banyak tambah banyak lagi garlic powder)
  3. Place the marinated chicken (skin side up) on an oven plate covered with aluminium foil. Spoon on the rub onto the overall surface of the chicken.
  4. Cut onion and carrots into cube and place on the oven plate.
  5. Grill the chicken in oven for 30-40 minutes 300-350 degree celcius.
  6. When the chicken is cooked, take out the oven plate and drain all the oil from the chicken into a saucepan.
  7. Heat the saucepan, masukkan the chicken stock, black pepper powder and coarsed black pepper. taste.
  8. Ready to serve with some salad or any side dishes.

Stuffed Roast Chicken




Ingredients:
  • 1 chicken (approx. 1.2kg)
  • softened butter
for stuffing:
  • 1/2 cup chopped onion
  • 2 tablespoon butter
  • 2 teaspoons dried parsley
  • 2 cups soft bread crumbs
  • 1/2 large onion (chopped)
  • 1 batang celery ( chopped , dibuang daun)
  • 1 beaten egg
  • 1/3 cup milk
  • 2 cube chicken stok (pati ayam) diluted in a cup of water
  • salt
for gravy:
  • 1 kiub pati ayam
  • 1 tablespoon corn starch
  • 1 teaspoon parsley
Directions:
  1. Bersihkan ayam dan bahagian dalam ayam.
  2. Dalam periuk, panaskan 2 tablespoon butter, kemudian tumiskan bawang. Masukkan celery. Masak sampai celery lembut. Kalau takut hangit, masukkan sedikit air stok ayam. Season to taste. Tutupkan api.
  3. Dalam mangkuk, pukul telur. Kemudian masukkan bread crumbs, kacau sebati.
  4. Masukkan adunan celery tadi ke dalam 3.
  5. Kemudian, masukkan susu dan air stok ayam sedikit demi sedikit untuk mendapatkan adunan yang elok. (Tidak perlu habiskan air stok ayam kalau adunan sudah cukup lembap)
  6. Panaskan oven to 180 darjah celcius.
  7. Sapukan keseluruhan badan ayam (dalam dan luar) dengan sedikit garam. Kemudian sapukan bahagian luar dengan butter. Letakkan ayam di dalam dulang oven yang agak dalam.
  8. Masukkan stuffing ke dalam ayam. Jangan sumbat terlampau penuh. Tutup lubang.
  9. Masukkan ke dalam oven, bakar selama 60 minit. Jikalau permukaan ayam nampak nak hangit, cover dengan aluminum foil.
  10. Selepas bakar, check bahagian dalam ayam untuk memastikan sudah cukup masak, kalau belum, masak lagik 7- 10 minit.
  11. Untuk gravy: Dalam periuk, panaskan baki chicken stock for stuffing tadi, masukkan 1 1/2 cups water dan kiub ayam. Masukkan lebihan stuffing tadi, parsley. Masukkan garam secukup rasa. Masukkan cornstarch yang dah di larutkan dalam air. Masak hingga agak pekat.

Apple Butter by Microwave

















this Apple Butter is very easy which can be made by microwave. It tastes like a thick apple jam.

Ingredients (for 1 medium Jar):

  • 2 apple, dipotong dadu ( tidak perlu buang kulit)
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon lemon juice
Method:
  1. Masukkan apple, lemon juice, maple syrup dan cinnamon ke dalam bekas yang microwave safe.
  2. Microwave on high for 15 minutes.
  3. Transfer mixture to a blender and process until smooth.
  4. Masukkan semula mixture to the bowl and microwave 5 minutes lagi.
  5. Biarkan sejuk dan transfer to a jar. Store in refrigerator.

Sheperd's Pie 2nd version (lidah Melayu)


Bahan- bahan:
(lapisan bawah)
  • 200g daging cincang (ayam pun x pe)
  • 1/2 biji bawang besar di potong dadu- dadu
  • 1 cawan mixed vegetables
  • 2 sudu besar serbuk kari (larutkan dalam 2 sudu besar air)
  • secubit garam
  • minyak untuk menumis
(lapisan atas)
  • 4 biji kentang di rebus dan dilenyek
  • 2 s/b mentega/majerin
  • 2 sudu teh garam
  • susu segar secukupnya
  • 2 s/b mozarella cheese (apa- apa cheese pun x pe)
  • sedikit daun basil (optional)
  • sedikit black pepper
Cara-cara:
Untuk bahagian bawah:
  1. Tumiskan bawang besar , kemudian masukkan serbuk kari yang telah dilarutkan dalam air.
  2. Masukkan daging cincang tumis sehingga masak (air daging kering).
  3. Masukkan mixed vegetables.
  4. Tambahkan garam dan adjust- adjust rasa nya sesedap rasa.
  5. Masukkan kedalam bekas untuk bakar.
Untuk lapisan atas:
  1. Campurkan kentang lenyek dengan mentega dan garam.
  2. Masukkan susu sehingga adunan lembut. (sesedap rasa, jangan byk sgt sampai lembik)
  3. Adjust- adjust sedikit rasa. Tambah sedikit garam kalau rasa tawar sgt.(Boleh juga di tambah dengan apa- apa herbs yang digemari)
  4. Masukkan adunan kentang+ susu di atas daging tadi dan ratakan
  5. Taburkan cheese dan basil dan black pepper ikut kegemaran masing- masing.
  6. Bakar di dalam oven pada 200 degree selama 25min (lapisan atas nampak kekuningan.)

SImple Microwave Macaroni

my mom used to like to bake this at home because its very simple and very mengenyangkan

Ingredients(3-4orang):

  • approx. 2 1/2 cups Macaroni
  • 2-3 cups water for boiling macaroni
  • 1 1/2 Ayam/ daging cincang
  • 1/2 Bawang besar dihiris-hiris
  • 2 1/2 sudu besar Serbuk kari
  • 2 biji Telor
  • 1 1/2 Susu segar

Cara-cara:

  1. In a microwaveable bowl, masukkan macaroni and add water angak2 lebih sedikit dari pada paras macaroni.
  2. Put in microwave, and microve re-heat for about 10-15 minutes, hingga lembut. Toskan macaroni dan ketepikan.
  3. Tumiskan bawang besar hingga naik bau, masukkan ayam/daging cincang.
  4. Larutkan serbuk kari dalam sedikit air, masukkan dalam kuali.
  5. Masak sehingga agak kering.
  6. Dalam satu mangkuk yang lain, masukkan susu segar, dan masukkan telur. Kacau sebati.
  7. Kemudian, masukkan ayam cincang yang telah ditumis tadi ke dlm mangkuk susu.Kacau.
  8. Dalam bekas caserol or pyrex, sapukan butter.
  9. Masukkan macaroni tadi, kemudian masukkan susu tadi ke dlm mangkuk pyrex.Make sure susu menutupi seluruh macaroni and jangan lebih drpd aras macaroni.
  10. Bakar dlm mikrowave 10-20 minit. Check with a fork. Kalau ade melekat2 lagi, bakar lagi for about 2 -3 minutes.

Apple Pie

Bahan- bahan:
Kulit
  • 250gm tepung gandum
  • 150gm butter
  • 90gm gula halus
  • sedikit garam
  • sebiji telur merah
Inti
  • 4 biji epal (dipotong dadu)
  • 3 sudu besar gula hals
  • 3 sudu besar tepung jagung
  • 1/2 cawan air
Cara- cara:
Untuk Kulit
  1. Pukul butter dgn gula hingga kembang.
  2. Masukn kuning telur,tepung dan garam dan gaulkan sehingga rata.
  3. Letak dalam peti sejuk sebentar.
Untuk Inti
  1. Masukkan gula,air dan epal ke dalam periuk.
  2. Masukn tepung jagung yg telah dilarutkan dengan sedikit air.Kacau sampai pekat dan masukkan sedikit garam.
Penyediaan
  1. Panaskan oven ke 200 darjah celcius.
  2. Letak separuh dari doh kulit dalam bekas yang sesuai untuk dibakar. Bakar selama 10 minit.
  3. Keluarkan kulit dari oven dan letakkan inti.
  4. Tutup pai dengan lebihan doh kulit tadi. Bahagian atas pai boleh di cucuk-cucuk dengan garfu untuk bagi kesan yang lebih dramatik. :P
  5. Sambung bakar selama 25 hingga 30 minit.

Cream of Celery Soup



Ingredients (2person):
  • Celery 1 batang + daun
  • Low fat milk 1 or 2 cups (depending on individual taste; soup lite or pekat)
  • 1 or 2 cup of water
  • Some parsley
  • Some salt
  • 1 Kiub pati ayam ( optional)
  • 2 tablespoon Parmesan cheese ,grated
  • Vegetable oil
Method:
  1. Tumis garlic with some vegitable oil sampai naik bau.
  2. Masukkan Celery (bahagian batang) yang telah di hiris2 about tebal 2 cm.
  3. Masukkan air, and susu.
  4. Boil sampai mengelegak sedikit (api perlahan)
  5. Masukkan parmesan cheese and kiub pati ayam.
  6. Add parsley and add salt secukup rasa.

Easy (Whole-wheat) Bagel


Ingredients:
  • 2 1/2 cups bread flour ( for whole-wheat bagel: 1 cup whole-wheat flour + 1 1/2 cup bread flour)
  • 1/2 teaspoon dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • approx. 1 cup warm water(varies depending on type of flour and weather)
Method:
  1. Put flour, sugar, and salt into large bowl and mix .
  2. Add yeast and water little by little, then knead together ingredients with hands until its manageable.
  3. Take out the dough onto a flat kneading surface. Knead until the dough is no longer lumpy and powdery, approximately 15min.
  4. Cut dough into 6 pieces. Shape into a ball. Cover with plastic wrap or a damp towel to prevent drying and let rest about 20 minutes.
  5. Shape the dough. Roll out the dough into a rope and tie the ends together.
  6. Cover the bagels with plastic wrap and let rest for about 20 minutes (30-40 min during winter time)
  7. Then, fill a frying-pan with water and a teaspoon of sugar or honey and bring to a simmer. Preheat oven to 190 degree Celsius.
  8. When the dough is ready(naik 2 kali ganda) , carefully drop them into the water and let them simmer for about 15 seconds on each side, flipping them only once. The bagels should float.
  9. Take the bagels out and blot excess water. If you would like to add toppings, do so now. (For toppings such as sesame, dump out the toppings on a small plate and gently press the top of the bagel into the topping. )
  10. Put the bagels onto a baking sheet or sapukan olive oil on the baking tray and let bake until brown, approximately 15-20 minute.
Note: You can use whole wheat flour and even ingredients such as cocoa,blueberry, cinnamon/nutmeg to make different kinds of bagel dough. Be sure to decrease the amount of added water accordingly

Tuna Pasta


Ingredients(2 person) :
  • any pasta ( speghetti etc.)
  • 1 tuna in can (plain one with oil)
  • approx. 3 cups fresh milk
  • some dried parsley
  • some dried basil
  • some black pepper course
  • 1/2 large onion
  • salt
  • 1 teaspoon cornflour
  • 1 teaspoon olive oil
Method:
  1. Rebus pasta with olive oil and some salt sampai pasta lembut.
  2. Drain the water and put aside.
  3. Potong bawang dadu- dadu. Then in a frying pan, panaskan olive oil and tumis bawang tadi sampai wangi.
  4. Add some black pepper then put in the tuna with the oil yang ada dalam tin tu.
  5. Panaskan sebentar, then add milk.
  6. Add parsley and basil then add salt and adjust the taste.
  7. Add cornflour with had been dissolved in some water.
  8. Serve pasta with the tuna gravy.

Grilled Salmon with White Sauce


Ingredients ( 2 person ):
  • 2 slice salmon fish
  • 1 sudu besar minyak zaitun
  • Some salt
  • Some black pepper course
  • 1 cup rice (I use brown rice)
For the White Sauce:
  • 2 tablespoon marjerin
  • 1/2 large onion (dicincang)
  • 1 tbs corn flour
  • Some parsley
  • 1 cup fresh milk
  • Some salt
  • Some black pepper
Methods:
Prepare the White Sauce:
  1. Panaskan majerin dlm periuk kecil, goreng bawang besar sehingga layu.
  2. Masukkan fresh milk , and some black pepper and parsley. Add salt to taste.
  3. Masukkan corn flour yang sudah di campurkan dengan sedikit air ke dalam periuk tadi.
Grilling the fish:
  1. Salut ikan dengan some salt and black pepper.
  2. Grilled in oven (300 celcius for about 20 minutes)
Serving:
  1. Letak 1/2 nasi di dlm pinggan then place the fish.
  2. Pour some sauce on the grilled fish.
  3. Add some salad when serving.

Sheperd's Pie

  • 200g daging cincang (ayam pun x pe)
  • 1/2 biji bawang besar di potong dadu- dadu
  • 2 ulas bawang putih di cincang
  • 1 cawan mixed vegetables
  • 2 s/b sos tiram
  • 2 s/b kicap manis
  • secubit garam
  • black pepper
  • minyak untuk menumis
(lapisan atas)
  • 4 biji kentang di rebus dan dilenyek@blend
  • 2 s/b mentega/majerin
  • secubit garam
  • susu segar secukupnya
  • 2 s/b mozarella cheese (apa- apa cheese pun x pe)
  • sedikit parsley
Cara-cara:
Untuk bahagian bawah:
  1. Tumiskan bawang besar dan bawang putih sehingga layu.
  2. Masukkan daging cincang tumis sehingga masak (air daging kering).
  3. Masukkan mixed vegetables, sos tiram, kicap, garam dan black pepper.
  4. Adjust- adjust rasa nya sesedap rasa.
  5. Masukkan kedalam bekas untuk bakar.
Untuk lapisan atas:

Mayo-Corn Pizza


Bahan - bahan:
(sekeping pizza berukuran 23-30cm)

Kulit Pizza
200 g (2 cawan) tepung gandum
20 g (2 sudu teh) yis segera
3 g (1/2 sudu teh) garam
5 g (1 sudu teh) gula
10 g (2 sudu makan) minyak sayuran
atau minyak zaitun
air suam untuk menguli

Topping
Pizza sauce or Tomato ketchup
Basil
Corn (yg dalam tin tuh je)
Mayonis
Pizza cheese (mozzarella )

Cara- cara:
  1. Campurkan tepung gandum, yis, garam, gula dan minyak dalam mangkuk besar. Gaul- gaul, kemudian masukkan air suam sedikit demi sedikit.
  2. Uli adunan tersebut sehingga ia menjadi satu doh yang lembut dan elastik.
  3. Masukkan doh ke dalam bekas yang telah disapu minyak dan diletakkan di tempat yang panas selama 40 minit. Doh ini akan naik seganda.
  4. Minyakkan acuan piza.
  5. Canaikan doh ke atas acuan pizza dan buatkan bentuk bulat dengan ketebalan 2 cm dan tinggalkan selama 10 minit sebelum diletakkan topping.
  6. Sapukan sos pizza ke atas doh pizza tadi, then taburkan sikit daun basil.
  7. Jagung dalam tin di tapis airnya dan digaulkan dengan mayonis secukupnya.
  8. Letakkan jagung bermayonis ke atas pizza.
  9. Taburkan pizza cheese secukupnya.
  10. Kemudian bakar di dalam oven suhu 200celcius selama 20 minit.

Note : Saiz acuan piza berukuran 23-30 sm diameter.
