Nasi Ayam


(hidangan 2-3 orang)


Untuk rebus
  • 1/2 ekor ayam dipotong ikut suka
  • 3 ulas bawang putih
  • 2cm halia
Untuk perap
  • 3 sudu besar kicap 
  • 3 sudu besar oyster sos
  • 3 ulas bawang putih
  • 1cm halia
  • sedikit serbuk black papper & garam
Untuk nasi
  • 3 cawan beras
  • 2 sudu besar butter
  • 3 ulas bawang putih -ditumbuk
  • 1cm halia - ditumbuk
  • 1 1/2 sudu besar serbuk kunyit
  • air rebusan ayam (3-3 1/2 cawan ikut sukatan masak nasi macam biasa)
  • sedikit garam
Untuk sos
  • 9 biji cili merah (@cili kering)
  • 5 ulas bawang putih
  • 2cm halia
  • 1 sudu teh cuka
  • garam & gula secukupnya (ikut citarasa masing2)
  • 1/2 cawan air
Untuk sup
  • lebihan air rebusan ayam
  • 1 kiub pati ayam
  • garam
  • daun sup dihiris
Cara- cara:
  1. Bersihkan ayam dan lumur dengan bawang putih dan halia yang di tumbuk (blend je pun tak pe), dan rebus hingga empuk.
  2. Toskan ayam. Perap dengan bahan- bahan perap selama 20-30 minit. Goreng hingga garing
  3. Basuh beras dan toskan. Panaskan butter, tumis halia dan bawang putih hingga garing. Masukkan beras dan kunyit goreng sebentar sambil kacau2 bagi kunyit rata. Tutup api, ambil beras tersebut dan letakkan ke dalam rice cooker. Masukkan air rebusan ayam tadi, dan masak nasi menggunakan rice cooker macam biasa. 
  4. Untuk sos, blendkan semua bahan diatas. Masak sebentar.
  5. Untuk sup, air rebusan ayam tadi di didihkan semula. Masukkan garam dan daun sup.

Simple Baked Cheesecake


-I made this for Mr.V's birthday -
for 8"

Ingredients:
Base
  • Biskut Marie (crushed)/ Digestive Biscuit (crushed) /Bread crumbs
  • 2 table spoon butter 
  • 1 table spoon sugar
Filling
  • 250g cream cheese (room temperature)
  • 1/2 table spoon vanilla essence
  • 3 table spoon plain sugar,
  • 2 eggs
  • 2 table spoon butter

Procedure:
  1.  Layer the baking pan with biscuit crush.
  2. Melt the butter and sugar.
  3. Pour into pan and mix well with crushed biscuits. Pad the crushed biscuit into crust layer in the pan.
  4. Sprinkle or mix unmelted sugar with the crushed biscuits (to make crust crunchy-sweet).
  5. Put in fridge to set the crust.
  6. Preheat the oven to 140 degrees celcius (low flame).
  7. Use a mixer to whip the  cream cheese, vanilla essence  and sugar.
  8. Then add the eggs. Mix well until the filling is smooth. 
  9. Taste to your liking. You can add a table spoon of lemon or lime to make it more sour.
  10. Pour  the filling into the pan. 
  11. Bake for 30-40 minutes, until the top of cheese cake turns slightly yellowish brown.
  12. Turn off oven and leave for 15-20 minutes. Take out to cool at room temperature then put in fridge. 
 Cake is best served a few minutes (15-20 minutes) after taken out of fridge when the cheesecake is softer.

Chicken Chop


Bahan- bahan:
  • Chicken leg (without bone) approx. 500 g
  • Oil
Seasoning
  • 1/2 Bawang besar 
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • A pinch of salt
  • 1 tbsp sugar
  • Some blackpepper
  • 1 tsp Serbuk pati ayam
Sauce ingredients
  • 50g fresh shitake mushrooms, sliced 
  • 3 tbsp Oyster sauce
  • 1/2 Bawang besar (chopped)
  • 3 garlic (chopped)
  • 1 1/2 cup milk
  • Sugar to taste
  • Salt to taste
  • 1 tsp chicken stock granules
  • 1 cup water
  • 1 tbsp cornstarch
 Method
  1. Blend bawang with soy sauce for seasoning.
  2. Marinate chicken with seasoning ingredients for several hours
  3. Once the chicken breast has been marinated, dip it in egg before coating with flour. 
  4. Deep fry the chicken breast till golden brown.
  5. To prepare the sauce, saute the onion and garlic .
  6. Add the remaining seasoning ingredients used for marinating the chicken.
  7. Add mushroom.
  8. Add in the oyster sauce followed by water. Add in some black peppers.
  9. Add milk
  10. Add cornstarch
  11. Pour onto the chicken and serve with salad.

Chicken Patties for burger


Ingredients (for 6 large patties):
2 pieces chicken breast (minced/chopped)
5 tablespoon cornstarch
5 tablespoon breadcrumbs
2 teaspoon chilli powder
2 teaspoon dried parsley
3 teaspoon olive oil
some salt and pepper

Method:
  1. Combine all the ingredients except cornstarch and breadcrumbs, mix well.
  2. Add the cornstarch and breadcrumbs , and mix.
  3. Pre-heat oven to 200 degree celcius.
  4. Make round flat shape from the dough and place on an oven tray (greased).
  5. Bake for 15- 20 minutes.
  6. Serve with burger bread or can also be frozen for use later. =)

Chicken, Brocolli and Pasta Gratin



Ingredients:
Pasta ( macaroni, penne,...)
Broccoli 1 bunga
Ayam isi dada approx 300g (potong dadu )
Full cream milk approx. 1 cup
Garlic 5 ketul (smashed & chopped)
Cheese approx. 1 cup
Breadcrumbs approx. 1 cup
Chicken stock 1 cup
Cornstarch 2 sudu besar
Salt and pepper


Method:
  1. Bring a large saucepan of water to the boil over a high heat, add the pasta and a pinch of salt and cook according to the instructions on the packet. Drain well and set aside.
  2. Bring another pan of water to the boil, then add the broccoli and a pinch of salt and boil for 5 minutes, or until the broccoli is just beginning to soften. Drain well.
  3. Then, in a saucepan, add oil and saute garlic. Add milk and chicken stock, add the chicken.
  4. Bring to simmer over a medium heat, stirring occasionally.
  5. Add cornstarch which has been diluted in some water.
  6. Add some salt and pepper to taste.
  7. Remove from heat, then add the broccoli, pasta and half of the cheese, and mix.
  8. Add the mixture in a Pyrex dishes, sprinkle bread crumbs and remaining cheese over the top.
  9. Bake in over 300 degree Celsius for 20 - 30 minutes until the sauce is bubbling and the breadcrumbs are crisp and golden.

Kek Coklat Simple

Bahan- bahan (18cm )
  • 150g coklat
  • 50g mentega
  • 50ml susu segar
  • 3 biji telur
  • 50g tepung
  • 10g serbuk koko
  • 1 sudu kecil baking powder
  • 40g gula aising
  • Secubit garam

Cara-cara

  1. Ayak tepung, baking powder dan serbuk koko.
  2. Campurkan coklat, mentefa dan susu segar di dalam periuk dan cairkan di atas api yang kecik.
  3. Panaskan oven ke 140 degree celcius.
  4. Asingkan telur kuning dan telur putih.
  5. Masukkan secubit garam dalam telur putih dan pukul hingga berbuih. Bila dah berbuih masukkan gula sikit demi sikit. Pukul sampai gebu.
  6. Dalam mangkuk lain pukul pula telur kuning sehingga gebu. Kemudian masukkan coklat cair tadi dan pukul sebati.
  7. Masukkan tepung sedikit demi sedikit sambil dikacau. Kacau sehingga sebati.
  8. Masuk pula telur putih sedikit dan dikacau. Ulang sampai habis.
  9. Bakar selama 45 minit.
  10. Selepas 30 minit dibakar, tutup permukaan kek dengan aluminium foil untuk mengelak permukaan kek daripada hangus.

Simple Grilled Chicken Breast with Black Pepper Sauce

Ingredients (for 2 to 3 people)
  • 3 chicken breasts (boneless)
to marinate:
  • approx. 1/2 cup of olive oil
  • some salt
  • some garlic powder
  • some parsley leaves
  • some coarse black pepper
to make a basic rub:
  • some salt
  • some chili powder
  • some garlic powder
others:
  • 1/2 large onion
  • 1 carrot
for black pepper sauce:
  • 1 cup of chicken stock
  • 1 tablespoon black pepper powder
  • some coarsed black pepper
  • 1 table spoon corn starch

Steps:
  1. Combine all the ingredients for marinate and marinate the cleaned chicken overnight.
  2. Combine all the ingredients for the rub in a bowl and mix well. taste the rub, and adjust rasa ikut kegemaran masing2. (kalau nak pedas tambah banyak chili powder /kalau suka garlic banyak tambah banyak lagi garlic powder)
  3. Place the marinated chicken (skin side up) on an oven plate covered with aluminium foil. Spoon on the rub onto the overall surface of the chicken.
  4. Cut onion and carrots into cube and place on the oven plate.
  5. Grill the chicken in oven for 30-40 minutes 300-350 degree celcius.
  6. When the chicken is cooked, take out the oven plate and drain all the oil from the chicken into a saucepan.
  7. Heat the saucepan, masukkan the chicken stock, black pepper powder and coarsed black pepper. taste.
  8. Ready to serve with some salad or any side dishes.
